Opportunities often disguise themselves into the background of our everyday lives. During my busy career as an event planner and country club manager, my talent for exceptional cooking and classic presentation would emerge as the perfect opportunity.
Hello! I’m Magid Assaleh of Classic Catering by Magid. My hospitality industry career began 29 years ago when I became the Food & Beverage Manager of Quail Creek Country Club in 1981 then the General Manager of 2 country clubs in Oklahoma including Oakwood in Enid, Willow Creek in Oklahoma City, and Sherwood Forest in Baton Rouge, Louisiana, this allowed me to plan and serve thousands of members and guests.
During those years I had the rare privilege of touring many wineries and private cellars in Napa and Sonoma Valley, giving me unforgettable insight into the art of wine. As my enthusiastic expertise in cuisine and wine developed, others noticed. In 1987 I was honored as the first Maitre D’ to be inducted to the Oklahoma chapter of La Chain Des Rotisseurs. Many dishes I’ve created over the years remain on the menus of almost every country club I managed.
After the crash of 2008 the country club I managed struggled to recover and this year was forced to delete my general manager position. While I could have pursued other offers, I accepted requests from people who wanted me to manage and cater their events. An opportunity was before me and I thought “Why not do this for a living?” Just two months later, I am busy planning and catering many parties.
The rules that govern my business are simple: never serve anything that I would not eat and never underestimate a customer’s expectations. From food preparation to presentation, I make sure everything is perfect. My goal is to overwhelm clients with the highest service and food that is to die for! My staff is trained to make sure the food looks and tastes the way it should. No one has time for apologies so we make sure we get it right from the beginning.
As a gourmet cook, I prepare everything from scratch so the food is fresh and yields the highest flavor. The international menu delivers Mediterranean, Italian, Mexican and American. Comfort food is a favorite among Oklahomans so I secured two excellent Bar-B-Que chefs and use my own family recipes for hand battered catfish, chicken tenders, mashed potatoes with gravy, steaks and much more. Of course I continue to craft my own signature creations so you can taste something new!
