Hello, my name is Carol Van Horn.  My husband, Joe and I are both chefs and co-owners of Echo Canyon Spa Resort.  I was working as a vegan chef in England before accepting a position of Food Service Director at the Lifestyle Center of America in Sulphur, Oklahoma, which specialized in diabetes treatment and the prevention of illness in natural ways.  I met Joe while he was there to quit smoking.  I also discovered that he too was a chef and a wonderful relationship and partnership began.

 

Joe and I married and began our life together on 27 lovely gated acres with a house, barn and orchard adjacent to the ChicasawNaturalPark.  About eight years ago, we decided to transform our property into a bed and breakfast, beginning with four rooms and a restaurant in one building, then adding another building with nine more rooms later.  Since Joe had been in the antique business, our guest rooms, restaurant, lounge and conference areas are beautifully appointed with antique furniture and accessories.  We soon realized that people enjoyed a spa experience, so we built a luxurious 5,000 square foot day spa where we offer 50 different treatments, including a variety of massages, wraps, scrubs, manicures and pedicures.  There is also an enclosed eight-person hot tub filled with mineral water.  Two-person mineral water Jacuzzi hot tubs are in each room.

 

Echo Canyon Spa Resort is well-known for the gourmet meals our staff prepares for our guests.  We named our 5 Star restaurant the Baron of Beef after one his family operated in New Mexico.  A gourmet breakfast is complimentary for our overnight guests.  We prepare candlelight dinners for guests and the general public. Filet mignon (we serve the top 2% beef in the country), roast duck and shrimp scampi are standard entrees, but we regularly offer the variety of other delights such as Crab Mornay, wild Alaskan halibut, prime elk, Australian lamb, Hawaiian style ahi, kobe beef, quail and other fowl.  Our signature drink is a peach hibiscus, created from our own orchard grown peaches – served with or without champagne.

 

From the very start, EchoCanyon has been extremely popular as a weekend getaway for couples and also as a “chick trip” destination.  The property is surrounded by lush forests and fields with a two acre-orchard and small vineyard making it a perfect setting for romance and an escape from city stress.

 

 The number of corporate and association groups staying and holding meetings here also are growing each year.  Meeting planners find their employees and clients appreciate the gourmet food, inspiring surroundings and the pampering pleasure of our spa services.

Our restaurant and lounge comfortable accommodate up to 60 guests and our conference area is perfect for groups of 50 or less.
